Quinoa Lunch Jars

As their name suggests, these jars filled with quinoa, Elan organic raw cashews, veggies, and fruits are perfect to take to work for lunch or to pack in your kids’ school meals. Easy and quick to make, it’s an excellent recipe to whip up anytime, even during busy week evenings. Share your recipe images with us!

Ingredients :

  • 2 cups quinoa, cooked
  • ½ cup Elan Organic Raw Cashews
  • 2 red bell peppers, roasted, peeled, and diced
  • ¼ cup sun-dried tomatoes, diced
  • 1 avocado, diced
  • 1 navel orange, peeled and cut in segments
  • ½ cup fresh basil
  • ¼ cup fresh mint
  • 2 tbsp olive oil
  • ½ tsp Himalayan sea salt

Method :

Mix all ingredients in a large bowl and fill 4 jars. Store refrigerated for up to 3
days.
