Holiday Spiced Granola

 

 

Cozy, spiced, and perfect for the season, this granola can be enjoyed as a breakfast or a holiday snack. It’s easy to make and makes a lovely gift too!

 

Ingredients:

  • 2 cups rolled oats
  • 1 cup Elan Organic Raw Almonds
  • ½ cup Elan Organic Raw Cashews
  • ½ cup Elan Organic Dried Cranberries
  • ½ cup Elan Organic Coconut Smiles
  • ¼ cup Elan Organic Pumpkin Seeds
  • ¼ cup Elan Organic Crystallized Ginger
  • ⅓ cup maple syrup
  • ⅓ cup coconut oil, melted
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • ½ tsp. ground ginger
  • ¼ tsp. salt

 

Method:

  1. Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine oats, almonds, pumpkin seeds, shredded coconut, cinnamon, nutmeg, ginger, and salt.
  3. Pour melted coconut oil and maple syrup over the mixture and stir until everything is well coated.
  4. Spread the mixture evenly on the baking sheet and bake for 20–25 minutes, stirring halfway, until golden brown.
  5. Allow granola to cool completely before mixing in dried cranberries, coconut smiles and ginger chunks.
  6. Store in an airtight container for up to two weeks.

 

Serving Suggestions: Enjoy with yogurt, sprinkle over a smoothie bowl, or simply snack on it throughout the holidays!
