Spicy Broccoli Soup
Entirely vegan, this Spicy Broccoli Soup recipe is a hot meal in more than one way! Seasoned with cayenne pepper and garnished with Elan organic seeds, it offers excellent taste and varied textures for a complete culinary experience. Share your recipe images with us!

3 cups broccoli florets

1 cup mushroom stock

1 garlic clove

1 tsp sesame oil

1⁄2 tsp cayenne pepper

Salt and black pepper, to taste

1⁄2 tsp Elan Organic Flax Seeds

1⁄2 tsp Elan Organic Whole Sesame Seeds

2 tbsp Elan Organic Raw Pumpkin Seeds

1⁄4 cup fresh mint

4 tbsp coconut yogurt

In a pot, heat the sesame oil over a medium-low heat. Add the garlic and broccoli florets and sauté for 3 minutes. Pour in the mushroom stock and incorporate the cayenne pepper. Season with salt and pepper.

Cook the soup base until the broccoli is tender. Remove the pot from the heat and blend the soup, until smooth.

Pour the soup into 4 bowls. Top with a dollop of coconut yogurt, mint, and seeds.
