Spring Overnight Oats

Ingredients:
- ¼ cup Elan Organic Raw Hazelnuts
- ¼ cup Elan Organic Raw Walnuts
- ¼ cup Elan Organic Raw Almonds
- ¼ cup Elan Organic Thompson Raisins
- 2 cups gluten-free oats
- 2 cups almond milk
- 1 pomegranate, seeds only
- 2 tbsp coconut sugar
- 1 tsp vanilla extract
- ½ tsp salt
Method:
- Combine all ingredients, except the pomegranate seeds, in a large bowl. Cover and refrigerate overnight.
- The next day, portion into 4 bowls and top with pomegranate seeds.
