Vegan Caprese Salad


This sumptuous Caprese salad brings the flavours of Elan Organic Maca Cashews, fresh basil leaves, red peppers, vegan cheese and soft figs together for a delicious, light summer meal. Cold, crunchy, refreshing, and substantial. Share your recipe images with us!

•  6 fresh figs, cleaned and quartered
•  1 bag Elan Organic Maca Cashews
•  1 bunch fresh basil leaves, roughly torn
•  1 package of your favourite fauxmage (vegan cheese), roughly torn
•  1 red bell pepper, thinly sliced
•  2 tbsp walnut oil
•  Freshly cracked black pepper
•  Fleur de sel




1. Layer a large serving platter with vegan cheese and peppers

2. Top with Elan Maca Cashews, figs and fresh basil leaves

3. Season generously with salt and pepper and the drizzle of walnut oil.
